Dinner tonight

Big hunks of red meat, baked potatoes w/fixins and lots of sliced avocado.

My family is back from Galveston. The dogs and I are very pleased.

I had leftover soup, of all things. I made it a few days ago because I was hungry for it. It had to be eaten or be thrown out. I know it's weird. But I eat ice cream in the winter, so there.

But there is good news. I did buy a steak today and that will be had for lunch tomorrow before it gets too darned hot.

I fixed Ox tail ragout for supper tonight, Served over noodles. It turned out pretty darn good. The meat was so tender that when you picked up a section it pretty much just fell off the bone, Browned the meat, caramelized the onions, added celery. bell pepper, some sangria wine, jalapeno and a few other things, added Rotel and crushed tomatoes, some water and put it in the oven at 350 and let it spend the afternoon there. I added Crema to it before serving. Easy to fix, easy to clean up after and delicious.

No way could I find ox tail within 150 miles of here. I don't think I've ever seen it.

We had boring store bought chicken cordon bleu. I'm with you on the avocado, Grouchy. No such thing as a salad in this house without avocado.

Pizza last night (it was Saturday night after all). But today I'll have crab cakes made by my favorite chef. He grew up at the Jersey Shore and that's where our family vacationed and enjoyed crab cakes. Lots of big chunks of crab and just enough "filler" to hold it together. It's not breaded and deep fried. Ted is the same one who completely changed my attitude towards brussel sprouts.

I've never known what the difference was between crab cakes and stuffed crab, as far as ingredients go. I do know I love them both.............long as there is no onion in them. :)

I bought the ox tail at Walmart on Round Grove Rd in Lewisville.

I really thought ox tail soup didn't have anything to do with an actual ox tail. It just doesn't sound appetizing to me at all. The tails are at the wrong end of the animal to me. And that's my idiot view. I think I need to go google it.

From the pix I saw there is a LOT of fat in the tail. And yeah, all I can think of is it swishing and, in the spring, being covered with green poo because of the fresh grass. :?

Those are my thoughts, too, Sue. Slaughter houses aren't very sanitary either. No way, no how! I won't eat tongue either. But that's because I raised baby calves on bottles and their tongues would wrap around my hands. Nope, just can't do that, thinking of those sweet little calves. It was really hard to even sell them.
