Black Eyed Pea Recipe

Sanger Steve's Pinto Bean recipe makes the best pintos I ever ate.
This recipe makes the best Black Eyes I ever ate.
2 lbs dried black eyed peas
12 cups water
2 TBS + 2 tsp Better Than Bouillon Chicken flavor - the secret ingredient
I lb bacon
1 lb ham - cut into bite sized pieces.
2 yellow onions- diced
1/2 cup butter
1 tsp black pepper
salt to taste
Soak the peas overnight in plenty of water.
Dice the bacon and brown in large pot - remove and let drain on paper towels
Add the butter to bacon grease and saute the onions until edges are brown
Add the water, Better Than Bouillon, ham, bacon and black pepper
Boil until the Better than Bouillon has melted
Add peas, cover and cook on low simmer.
Stir every hour and watch the water level.
They'll be done in about 5 hours.
Taste for salt and add if needed. It probably won't be.
