Just finished a batch of my world famous spicy peanuts, even Donna likes this batch,can't keep my hands out of the jar.

One pound of redskin peanuts

Tablespoon of butter

1/2 teaspoon cumin

1/2 teaspoon pickling salt

As much cayenne as you want, start with a 1/2 teaspoon

Toast the cumin,salt and cayenne in a dry skillet till you can smell the spices

Add the butter and peanuts and toss with the spices, roast the peanuts over low heat till you start to get a bit of a darker color to the nuts.

Try to let them cool before you start eating.

Wonder if it would work with pecans. My great grandmother used to make the best roasted pecans and divinity too.

Sounds good.

On a similar note, what the heck are "boiled peanuts" that you see advertised all over the place in rural Georgia and North Carolina? Are they infused with some sort of spice that gives them flavor? Or is it just another way to cook peanuts?
