'Cept for the mussels it all sounds great.
We had steak and salad. Marinaded it 2 days. Very good.

Well, I kinda fly by the seat of my pants on recipes but I can give you ingredients and approximate amounts. 1 can cheap beer (we have also used Shiner Bock but really can't tell the difference between cheap and classy beer), about 1/4 cup each balsamic and red wine vinegar (no such thing as too much of these in my book - I love 'em both.), about 1 tbsp each onion and garlic powder, about 2 tbsp Italian seasoning (the dried herbs. Most of the time I don't use that but use the individual ingredients - basil, oregano, and thyme), about 1 tbsp. powdered ginger, about 1 tbsp. black pepper. I put it all in a plastic zip bag and stick it in the fridge. Since I smoosh out all the excess air there is no need to turn the bag over. It's my go to marinade for beef, chicken, and pork.

And I agree about trying new things especially when it comes to marinades.
I'm completely onion and garlic intolerant so use the powders instead of the real things.

poached chicken thighs
fried polenta as an appetizer
dessert is no bake oatmeal, peanut butter . chocolate cookies

Sounds good but - poached chicken thighs? I imagine boiled legs. I'm sure that's not all involved. Recipe would be interesting to see if you wish to share.

Didn't poach them , I got lazy and baked them .

The whole polenta creation and frying process is a pain and the results, at least to my taste, are underwhelming. I'm not a fan of grits no matter what they are called or how they are prepared. If I'm going to use cornmeal I'd rather have cornbread or hush puppies.

I step outside the box and spice it up. Agree about cornbread and hushpuppies but we also like some diversity.
