One of our cards has already been replaced with the new "format."

Waiting to see how long it takes the other companies to offer the new, supposedly more secure options.

I haven't heard about them. How do they work?

Supposedly they prevent theft of the ID of the card (via skimmers etc.)

The card looks like our old card from Chase.....however, the card no longer has raised numbers and the number is on the back of the card.

It also has a computer chip "icon".
When you used the card in the new readers, the card is inserted and remains in the device until the transaction is completed.
We have encountered these readers in Canada already.

News stories say that all of Western Europe uses them and they are more secure than what the US uses.

When we were in Montreal, they had to run our cards with carbon paper since we didn't have the chip. ALL cards in Canada have them.
