Hummus
I've become addicted to hummus.
I used to think of it as something 70 year old, California, tie died hippies ate. It may be but I still like it.
I was diagnosed with Type II diabetes about a month ago. Hummus is one of the foods that are pushed in the diabetic diets.
I bought it and ate it and liked it. I started making my own and liked it even better. It's easy and cheap.
Any other fans?

I ate it a time or two and had a strong desire to wrap a rag around my head afterward, so I never ate it again

I have Type II diabetes too. Don't eat a diet, just don't use sugar any more. I've never eaten hummus. Maybe I'll try it. Do you just spread it on bread?

I spread it on bread and also just eat it with a spoon.
When I started making it I followed a standard recipe with chick peas, tahini, lemon juice, olive oil and garlic.
Now I use natural peanut butter (no sugar) instead of tahini. It has a roasted, nutty taste but you can't tell it's peanut butter. I like it better than tahini.

2 15 oz cans of chick peas (garbanzo beans)
1/3 C natural peanut butter
1/4 C Greek yogurt
1/4 C olive oil
3 T fresh lemon juice - about 1 big lemon.
1 or 2 cloves garlic (I use two)
2 t cumin - I don't like cumin so I don't use it.
1 t salt
Drain and rinse the chick peas.
Dump everything in a food processor and grind away.
You want it really smooth.
If you think it's too thick, add olive oil and yogurt to thin it. I wind up adding a little.

Love the stuff..always order some with Mediterranean food, which I eat quite often.
Not something I would make on my own, though..I want it to be made a real live Mediterranean.
..sort of like Mexican food..I need Mexicans to make that.

Except for the garlic that doesn't look too bad. I've tried store bought hummus and didn't like it.

After looking at the Recipe, it hit me. That's almost the same my Grand-Father made for Carp Bait.

Which is kinda what the hummus I had tasted like...........at least what it would have been better suited for. I don't like the taste chickpeas and don't see the point in adding a bunch of other stuff to cover up that taste.
All in all I'm so very fortunate to live in this country. I think I'd quickly starve to death in many others.

I made a batch today with butter beans instead of chick peas. I think it's better.
