Were you involved in the Sanger Elks lodge bbq cookoff ?

I judged my first event a few weeks ago and had a blast. Never realized there is actually bad brisket out there

No we didn't make that one, if fact I didn't even know it was going on till another cook stopped by and asked if we were cooking.

Yes there are some very bad briskets out there, some cooks don't even know how to slice a brisket, did you run into any of those?

Not that i know of, hell I might make that mistake.

I judged brisket & chicken. Some pretty sorry entry's for chicken as well. The winners stood head and shoulders above all others when it came to judging.

I had some darn good chicken as well. made we want to try harder at home.

Chicken is hard in competition, at home you can brine for 24 hours to produce a better bird. Then when cooking pull it off when it hits 165 degrees.

Some of the best we have ever done was cooked to 150 on the pit and finished on a grill, first and second place on that bird, yeah and don't ask how we got first and second.

I can personally attest to the fact that you can cook a bad brisket. I don't have a smoker so have given up on ever trying to cook a good one...........or another one at all. All the ones I've tried have been disasters.
