Oh my goodness, that looks delicious! My husband is avoiding flour, sugar, fat, etc. What a treat this will be. I think I'll make it tomorrow for dinner. Thanks for posting this!

this one looks yummy, too ..Summertime chopped Salad
Ingredients:
2 1/1 cups butter lettuce, chopped
2 ears grilled corn, cut off the cob
1/2 cup grape tomatoes, quartered
2/3 cup blueberries
2 slices of bacon, cooked and crumbled
1 grilled chicken breast, chopped
1 avocado, chopped
1/3 cup crumbled feta
1/2 teaspoon salt
1/2 teaspoon pepper
2 limes, juiced
2 teaspoons honey
1 teaspoon red wine vinegar
2 teaspoons olive oil
tortilla chips for serving
Directions:
n a large bowl, mix together lettuce, corn, chicken, avocado, blueberries, tomatoes, bacon and feta. Sprinkle with salt and pepper then toss thoroughly.
In a smaller bowl, whisk together lime juice, honey, olive oil and vinegar. Pour over salad, then toss once more. Serve with tortillas chips.

We had the recipe I posted tonight.
It is VERY good!!
We used a mix of arugula and spinach for the arugula part of the salad.

Here's one I love
Broccoli salad
Make ahead and let meld:
3 stalks broccoli
1 purple onion
1 can artichoke hearts
1 package slivered almonds
6 slices bacon
Cook almonds in bacon grease
until brown
Add right before serving.
1 cup mayo
1/4 cup red wine vinegar
1/2 cup sugar

Make ahead and let meld:
